The Georgia Smash

As Summer comes to a close I thought we should have one last foray into the refreshing, citrusy, crushed-ice cocktails.  Today I'm making "The Georgia Smash."  This is a cognac based cocktail that plays with those popular summer flavors: Peach, lemon and mint.  The build is a variation on a classic "Smash" so get out the lewis bag and mallet because we're gonna crush some ice.  

To make this drink you will need the following items:

  • Lewis Bag (or bar towel)
  • Mallet
  • Cocktail shaker
  • Muddler (can work as a mallet)
  • Jiggers
  • Some Fresh Mint Sprigs
  • Lemon Wedges
  • Cognac
  • Creme de Peche
  • Simple Syrup
  • Lemon Juice
  • Angostura Bitters
  • Ice

Fill your Lewis Bag with ice and start swinging that mallet.  Once you have plenty of finely crushed ice its time to start building your cocktail.  

Add 5-6 mint leaves, 2 lemon wedges and .5oz Simple Syrup to your cocktail shaker.  Muddle those ingredients to combine.  Add 2oz Cognac, .5oz Creme de Peche, .25oz lemon juice, and 2 dashes of Angostura Bitters.  Fill the shaker with ice and shake it like you mean it.  

Double strain the cocktail into a double old fashioned glass filled with crushed ice.  Top up with a nice pile of crushed ice. Garnish with a few fresh mint sprigs.  

Now it's time to enjoy a last little bit of summer.
